Eburneo comes from a simple idea: what if we let four old Umbrian grape varieties do what they do best? No fancy marketing, no complicated story - just grapes that have grown around Spina for centuries, finally getting the attention they deserve.
Four Grapes, One Vision
The vineyards sit on those clay-limestone hills that make the Colli Perugini special. Cantina La Spina works with Grechetto di Todi, Trebbiano Spoletino, and Malvasia - varieties that most people outside Umbria have never heard of, but locals know are worth the effort. Each grape gets picked when it's ready, not when the calendar says so.
The winemaking is straightforward: separate fermentation for each variety, then careful blending in winter. No shortcuts, no tricks - just letting the grapes show what this particular piece of Umbrian countryside can produce.
In Your Glass
Eburneo pours pale gold with a nose that reminds you why you fell in love with wine in the first place. White flowers, ripe peach, and those wild herbs you smell walking through Umbrian hills in spring. Chill it to 10-12°C and it opens up beautifully.
The palate is clean and mineral, with enough weight to pair well with food but fresh enough to drink on its own. Works great with seafood, herb dishes, or local cheeses - though honestly, it's good enough to just enjoy while figuring out what to cook for dinner.
