The second kind is served at our restaurant in Torgiano, where traditional Umbrian dishes are still on the menu today.
A Method, Not a Fixed Recipe
Many Umbrian dishes come from a method applied to different ingredients, more than from a single fixed recipe. "In porchetta", for example, does not only mean porchetta: on our menu it appears on both rabbit and snails, the same herb base applied to two completely different meats. It is a way of cooking passed down, more than a single dish.
Everyday Food and Feast Food
Umbrian cooking has two registers. Some dishes are made for the everyday meal, direct and unpretentious: beans with pork rind, farmer-style tripe, sautéed field greens. Others are made to be shared on bigger occasions, often served for two: zuppa umbra, herb-scented suckling pig, beef stew with Torgiano Rosso Riserva. The level is the same, only the occasion changes.
