HISTORY AND INNOVATION OF CASTELLO DELLA SALA:

Among the notable wines of Orvieto, the Cervaro della Sala is distinguished by its history of pioneering and innovation. Introduced in 1985 by the prestigious Castello della Sala winery of Marchesi Antinori, this label was one of the first to adopt revolutionary winemaking techniques, such as malolactic fermentation and ageing in barriques, marking a significant step forward in the region's wine production.

TASTING NOTES AND PAIRINGS:

The Cervaro della Sala presents an inviting straw yellow colour, enriched with delicate greenish hues typical of Orvietan wines. On the nose, it evokes notes of chamomile, white flowers, and flint. On the palate, flavours of vanilla, citrus, and hazelnut butter are distinct. These characteristics make the Cervaro della Sala an exceptional and sought-after example of Orvieto wines. It pairs excellently with warm fish starters, pasta with fish or tomato-based sauces, risotto with mushrooms, stewed fish, game, stewed white meats, grilled roasted meats, and medium-aged cheeses.

Following an oenological experience in Burgundy, Marquis Piero Antinori and the oenologist Renzo Cotarella, now at the helm of Marchesi Antinori, were inspired to create an exceptional quality white wine at their Castello della Sala estate in Umbria. This wine, amongst the pioneers in Italy for using barriques for ageing, has captivated a wide audience, from experts to newcomers, with its intense and enveloping flavour.

Its uniqueness comes from the harmonious fusion of Chardonnay with a hint of Grechetto, a grape variety that not only enriches the taste profile of the wine but also strengthens its connection to Umbrian roots.
