HAND-CRAFTED WILD BOAR UMBRIAN MORTADELLA
The wild boar meat is very famous in Umbria, because it combines the taste of pork with that of game. Cooked sausage produced with shoulder, bacon and pork cheek of local pigs with the addition of wild boar meat. Another fundamental ingredient is the lard of the dorsal part cut into cubes that does not characterize the appearance. It has a particular and aromatic scent and its taste is typical and delicate.
