The sheep's milk, thanks to its rich content of fats, proteins and mineral salts, gives rise to particularly tasty, full-bodied and different cheeses. It is very important to underline the fact that all the cheeses initially have the same lactose content, but in mature pecorino cheeses the lactose is eliminated during the maturation phase, causing all its traces to be lost.
