PECORINO CHEESE SEASONED WITH FIG LEAVES
The rationale behind cloaking the cheese in leaves is, as with wheat, to keep it fresh and protect it from insects.
Fig leaves are ideal for these purposes, so the cheese is placed in a wooden vat that is then layered with the aforementioned leaves.
This way, the cheese is kept fresh while it takes on the flavor of the leaf used.
