In the hills of San Gemini, Umbria, Leonardo Bussoletti makes Collemurello from organically grown Trebbiano Spoletino. After spontaneous fermentation, the wine spends six months on its fine lees in stainless steel, followed by another six months in bottle. This gives it time to develop texture while retaining its lively acidity.

Expect aromas of hawthorn blossom, dried flowers and ripe orchard fruit, followed by a generous palate and a long finish. Its balance of freshness and body makes Collemurello a good choice for grilled prawns, roast chicken or semi-aged cheeses. Serve at 12-14°C.
