Fresh truffles are available only during their natural harvesting season. White truffle, black winter truffle, summer truffle, uncinato truffle and bianchetto truffle each bring a different aroma, intensity and use in the kitchen.
White truffle is prized for its intense aroma and is usually served raw. Black winter truffle has more depth and works well in richer recipes. Summer truffle, also known as scorzone, is milder and suits simple dishes. Uncinato has a stronger aroma than summer truffle, while bianchetto has a sharper and more distinctive character.
