Black Winter Truffles (Tuber Melanosporum Vitt.)
Processing and refining truffles is a difficult task, which is done using peculiar techniques, coming from ancient experience and traditions, keeping all the genuinity and the characteristics of the product, avoiding the use of coloring and preserving substances, which would distort their natural flavour.
The goal is to better all the preservation procedures, without damaging the genuinity, to mantain the freshness of a product which, if fresh would deteriorate in a few days.
